How to make pasta Alfredo - Delicious Italian Alfredo sauce

On the Internet you will get many recipes of Alfredo sauce. And possibly all are very rich. But if we go to the most traditional, classic, original, purist, then there is only one way to make this famous Alfredo pasta.

I summarize it this way: the original Alfredo pasta is prepared only with butter and Parmesan cheese and fettuccine is used, period. Any other extra ingredient "distorts" the authentic recipe.

Pasta Alfredo or Alfredo sauce?

People refer to this dish generally in one or the other way indistinctly, and you will have seen that in this post I use both terms. However we can get technical:

Pasta Alfredo: is a fettuccine dish with butter and Parmesan cheese. In its original version, it has nothing else. It is made very fast and it is delicious.

Salsa Alfredo: is a sauce made with butter, parmesan cheese and cream (cream of milk) to which you usually add other ingredients such as garlic or onion. Traditionally it is used with fettuccine, but there are people who put it to other types of pasta: macaroni, spaghetti, ravioli, etc.

Alfredo pasta preparation

As I mentioned before, the authentic Italian recipe is made only with parmesan cheese and butter, and is used fettuccine.

Ingredients for 2 people:

  • 2 servings of fettuccine (also called fettuccini)
  • 2 tablespoons of butter
  • ½ cup of grated Parmesan cheese

Creamy Alfredo sauce


  • 2 tablespoons of butter
  • 1 cup of cream
  • ½ cup of grated Parmesan cheese
  • 2 cloves chopped garlic very small
  • Pepper


Heat a pan with a tablespoon of olive oil and fry the garlic over medium heat.

Before the garlic is browned, add the butter and the cream, stir well.

Add the Parmesan cheese now.Add butter, cheese and cream.

  • Alfredo sauce with pine nuts, or nuts: Prepare a traditional Alfredo sauce without cream, just cheese and butter. When serving with the pasta, put pine nuts or walnuts (or both) chopped.
  • In all cases you can decorate with a touch of fresh parsley. And always remember to put a pinch of freshly ground black pepper.
